Harvesting New Mexico Chiles

New Mexico chiles are one of those unique vegetables that can produce two very differnt food products from a single plant, green and red, it just depends on when the pods are harvested.

  • Green Chiles are harvested just before they begin to ripen. They should be bright green, firm and fleshy, perfect for roasting. Scroll down to find out more about harvesting and roasting green chiles.
  • Red Chiles are harvested after ripening on the plant. The bright red pods can be dehydrated by stringing them together into a ristra or using a food dehydrater.  Scroll down fro more information.
